- 1 cup Wheat Pasta
- 2 tsp Carrot chopped
- 4 tsp Onion chopped
- 1 Tomato medium
- 2 tsp Capsicum chopped
- 2 pinch Pepper powder
- 2 pinch Turmeric
- Jeera few
- Mustard seeds few
- 1 tsp Coriander leaves chopped
- 1 tsp Ghee
Boil the wheat pasta according to the package instructions. Drain and set aside.
In a kadai, heat ghee and sauté tomato and 3 tsp of chopped onions for 5 minutes on low heat.
Blend the sautéed onion and tomato to a smooth puree and keep it aside.
In the same kadai, add another tsp of ghee and sauté jeera (cumin seeds) and mustard seeds until they crackle. Then, add the remaining chopped onion, carrot, and capsicum. Mix well.
Let the vegetables cook for about 10 minutes on low heat. Then, add cooked pasta, pepper powder, turmeric, and the tomato puree. Mix everything well.
Allow the pasta to cook for another 7 minutes, stirring occasionally.
Veggie Pasta is now ready to be served.
