
Beetroot Curd Rice

Ingredients
- 1 Beetroot medium-sized
- ½ cup Curd (yogurt)
- Rice boiled
- 1 cup Water
- ¼ tsp Ghee
- ¼ tsp Urad dal split
- ¼ tsp Jeera (cumin seeds)
- 1 tsp Coriander leaves chopped
Instructions
- Cook rice and steam 1 Beetroot separately until tender.
- Blend beetroot into a puree and mix with 1/2 cup Curd.
- Mash Rice and combine with beetroot-curd mixture in a pan. Add 1/4 tsp Ghee, 1/4 tsp Urad dal, and 1/4 tsp Jeera for tempering.
- Serve the flavorful Beetroot Curd Rice garnished with chopped 1 tsp Coriander leaves.
