
Beetroot Cashew Soup

Ingredients
- ½ Beetroot medium
- ½ Onion medium
- ½ Tomato medium
- pinch Turmeric
- 1 Clove
- Garlic minced
- 2 pinch Pepper powder
- 4 Cashews
- ½ cup Water
Instructions
- Peel and chop the 1/2 Beetroot, 1/2 Onion, and 1/2 Tomato.
- Steam the chopped vegetables and set them aside.
- Soak the 4 Cashews in hot water for 1 hour and drain.
- In a blender, blend all the ingredients (including the soaked cashews) until you get a smooth paste.
- Now take a sauce pan, cook the puree along with the water for 10 mins in simmer.
- Serve warm.
